Zucchini Bread

  • 2 organic zucchini (medium), grated
  • 2 cups all purpose flour
  • 3/4 cups preferred sweetener, I used molasses
  • 3 tbsp butter
  • 1 tsp baking powder
  • 1 tsp baking soda
  • a pinch of salt
  • 1/4 cup pumpkin seeds and sesame seeds
Directions: Mix the molasses and butter until soften. Add grated zucchini and the rest of the ingredients except the seeds. Pour the batter into a loaf pan, sprinkle the seed. Bake in the pre-heated oven for about 30 minutes 200C

* This zucchini isn't raise well as I didn't use any egg. Vegan version replace the butter with preferred fats
