Banana Bread

  • 2 over ripe banana, mashed
  • 1/2 cup walnut, chopped
  • 1 cup whole wheat flour
  • 1 cup all purpose flour
  • 1 egg, separated
  • 1/2 cup preferred liquid sweetener, I used agave
  • 1/4 cup light olive oil or melted butter
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp ground cinnamon
  • a pinch of salt
  1. Combine the dry ingredients in a bowl, mix with a whisk
  2. In a bowl mix mashed banana, egg yolk, liquid sweetener, and olive oil
  3. Whisk the egg white until stiff
  4. Fold the egg white into the banana mixture
  5. Add the dry ingredients to the wet mixture, do not over mix
  6. Pour the batter into a loaf pan
  7. Bake in the pre-heated oven on 175 Celcius for about 40 to 50 minutes until a toothpick inserted into the center of the loaf comes out clean
You may find this banana bread not to sweet because it's how I like it. You can add more sweetener to your preferred taste, have a try
