Yogurt Waffle

  • 2 cups all purpose flour
  • 1/2 cup tapioca or potato starch
  • 1/2 cup plain yogurt
  • 1 cup milk
  • 1/3 cup light olive oil or vegetable oil
  • 1 egg, separated
  • 2 tsp baking powder
  • 2 tsp baking soda
  • 3 tbsp sugar or preferred sweetener
  • 1 tsp cinnamon or you can use vanilla extract
  • a pinch of salt
  1. Mix the flour, tapioca, salt, cinnamon, baking powder, and baking soda
  2. Combine egg yolk, yogurt, milk, and sugar in a mixing bowl, stir well
  3. Beat the egg white until stiff
  4. Mix all the wet and dry ingredients
  5. Pre-heat the waffle iron, spray with cooking spray or lightly brush with some oil. You can use waffle maker as well
  6. Pour the waffle batter into the waffle iron, flip once one side is done
  7. Serve with you favorite syrup or jam
