Spanakorizo (Greek Spinach Rice)

  • 1 cup basmati rice
  • 2 cup spinach (horenso), chopped
  • 1 cup fresh dill, chopped
  • 2 cloves garlic, minced
  • 1 green onion, sliced
  • 1/2 cup onion, sliced
  • 1-2 cup water
  • salt and pepper to taste
  • olive oil
  • On a pan add saute the onion and garlic with olive oil
  • Add the green onion, and rice
  • Pour the water, cook the rice with the lid on
  • Add the dill, spinach, salt and pepper
  • Cook for few more minutes
