Apple Cinnamon Lattice



Pie filling:
  • 3 Royal Gala or Granny Smith Apple, peeled, diced
  • 2 tbsp tapioca flour or sweet rice flour
  • 1/2 cup of water
  • 1/2 cup agave or any preferred sweetener
  • 1 tsp ground cinnamon
  • 1 tbsp unsalted butter butter
  • a pinch of salt
Crust: puff pastry or my pie crust recipe

Direction:
Put the butter on a pan, add the apple. Then add the flour, mix. Pour the water, agave, and add the cinnamon, cook until the apple soften. Put the puff pastry or your favorite pie crust dough onto the pie pan, baked until half done. Add the apple mixture then cover with the puff pastry lattice, brush with agave, bake until golden brown. You can do egg wash but I don't like the smell so I prefer to brush it with agave
