Green Falafel

Ingredients:
  • 2 cups cooked chickpeas
  • 2 cloves garlic, pureed 
  • 1/2 onion, minced
  • 1/2 cup basil leaves
  • 1/2 cup kale or spinach
  • 3 tbsp flour
  • 1 tsp baking soda
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp cumin
  • salt and pepper to taste
Directions:
  1. Combine all ingredients in a food processor until well combined. 
  2. Form the falafel balls, at this point you can deep fry it or bake in the oven
  3. Falafel best served in a wrap with veggies and hummus
