Raw Pad Thai Salad


I was wrong about this dish. I underestimated it, well until my first attempt! Garlic basamic vinaigrette salad is my favorite, and I thought that's it, others can't be better. Finally, I give a try making raw pad thai. It was sooo good! I like it, it's a tasty salad and very refreshing. Garlic and fresh ginger created a unique taste, I personally like it to be spicy so I always add bird's eye chili and some cayenne pepper. Any veggies will do, but I must say zucchini is the main thing here.


Ingredients:
• zucchini, julienned or spiraled
• carrot, julienned
• purpled cabbage
• green cabbage
• green onions, thinly sliced
• hemp hearts or sesame seeds

For the dressing, you will need:
• a clove garlic, grated
• 1 tsp grated ginger
• 2 tbsp almond butter, or you can try peanut butter
• 1 tbsp tahini
• 2 tbsp tamari
• 2 tbsp coconut nectar or any preferred liquid sweetener
• 1 juice of lime or more
• 1 tsp cayenne pepper
• sliced of bird's eye chili (optional)

Directions: mix all the dressing ingredients, toss all the ingredients together until well coated.
