Homemade Mochi Ice Cream

Ingredients:
  • 1 cup mochi flour / sweet rice flour / tepung beras ketan
  • 1 cup water
  • 1/4 cup sugar, you may need less or more depending on your taste
  • pandan paste or any other flavoring of your choice
  • corn starch or potato starch
  • your favorite ice cream
Directions:
  1. In a bowl combine the flour, water, sugar, and flavoring, mix well
  2. Microwave for about 3 minutes, set aside
  3. Scoop the ice cream into your preferred size and freeze it again
  4. On a working surface, sprinkle some corn/potato starch, add the cooked mochi
  5. Roll the mochi, cut in circle, put the ice cream in the middle
*You can also use a steamer instead of microwave, use less amount of water about 3/4 cup, it will take about 15 to 20 minutes to cook
