Sambal Matah (Balinese Shallot Lemon Grass Relish)


Ingredients:
  • 10 cloves asian shallot (bawang merah), thinly sliced
  • 3 cloves garlic, minced
  • 5 or more bird's eye chili (cabe rawit), sliced
  • 5 kaffir lime leaves (daun jeruk purut), thinly sliced
  • 3-5 sticks lemon grass, thinly sliced the white part
  • 2 tbsp lime juice (limau)
  • 1 tsp toasted shrimp paste (terasi)
  • 3-5 tbsp light olive oil or vegetable oil
  • salt to taste
Directions:
  1. Mix the shallot, garlic, chili, lime leaves, lemon grass, salt, and shrimp paste
  2. On a pan heat the olive oil
  3. When the oil is hot, pour the mixture, stir for 5 seconds
  4. Turn off the heat, put the sambal into a bowl
  5. Add lime juice, mix well
