Coyo (Vegan Coconut Yogurt)


Ingredients:
  • 1 cup young coconut meat
  • 1 capsule probiotic
  • coconut water as needed
Directions:
Process the coconut meat and probiotic in a blender, add coconut water as needed. Blend until smooth. Use very young coconut meat if you want yogurt drink consistency. Pour it in a jar, leave in room temperature for overnight or at least 8 hours. It will expand its volume, you can smell and taste it. It will turn sour and of course taste like yogurt. Chill in a fridge it will last for few days. I like to add some coconut nectar and mashed berries into the coyo.
