Chocolate Cupcake with Marshmallow


Ingredients:
  • 2 eggs
  • 2 tbsp plain yogurt
  • 2 tbsp melted butter
  • 1/4 cup honey / sugar, or to taste
  • 1 tbsp cocoa powder
  • 150 gr melted chocolate bar of your choice
  • 4-5 tbsp all purpose flour
  • 2 tbsp toasted almond flour
  • 1 tsp baking powder
  • a pinch of ground cinnamon or vanilla
  • marshmallow as needed
Directions:
  1. Combine the wet ingredients: egg, yogurt, melted butter, and melted chocolate
  2. In other bowl mix the dry ingredients: all purpose flour, almond flour, cocoa powder, baking powder, cinnamon and / or vanilla powder. If you use vanilla extract, add it into the wet mixture.
  3. Add the dry ingredients into the wet mixture little by little, fold the batter but remember do not over mix
  4. Pour the batter into paper cup, bake in a preheated oven at 200C for about 10 minutes
  5. Scoop a little amount of the cupcake, place the marshmallow on top, and broil for a couple minutes
Notes:
  • Make sure to use a good quality of chocolate because it really affect the result. Fyi, you can use any of your favorite chocolate bar even the one that already has flavor or nuts in it.
  • Always preheated your oven before baking
