Resep: Soto Ayam Koya Recipe



Yay.. finally, writing this Soto Ayam recipe. I've made it many times, and once I posted a picture of it on my Instagram unexpected that many asked for the recipe, OK so I decided to make a video about how to make it and here's the recipe. It's like a feast for Kevin whenever I make Soto Ayam, he definitely eat it for breakfast, lunch, and dinner. It's even better with Koya, shrimp crackers and garlic powder mixture, so make sure to make it ahead.




For 8-10 servings
Ingredients:
  • 700 gr bone-in chicken, I used chicken breast
  • 5 hard boiled egg
  • 100 gr glass noodles, soaked in water
  • 300 gr white cabbage, shredded
  • 3 stalks green onion, thinly sliced
  • 3-5 stalks baby celery, thinly sliced
  • 1,5 lt water or as needed
  • 1 tbsp sugar
  • 1-2 tsp mushroom bouillon or chicken powder
  • 3 tbsp cooking oil
  • salt & white pepper to taste
  • fried shallot
  • sweet soy sauce, as needed
  • lime juice
  • simple sambal (blend boiled bird eye chili, water, salt)
Herb & Spices:
  • 8 shallot
  • 4 cloves garlic
  • 5 cm tumeric
  • 3 cm ginger
  • 3 candle nut (optional)
  • 2 stalks lemongrass, bruised
  • 10 kaffir lime leaves
Koya:
blend some shrimp crackers and fried garlic using blender or food processor until become fine powder, store in a jar
